NOCTAIRE begins where nature, precision and patience meet. From the purity of its ingredients to the silence of the bottle, every stage is allowed to unfold at its own rhythm.

NOCTAIRE begins with the liquid truth of nature. No artificial flavors. No colorants. No synthetic preservatives. Every ingredient is selected for its purity, origin and sensory potential. Nothing is added to conceal. Everything is chosen to reveal.

The silent foundation.

Spring purity

Water is the silent canvas of the entire NOCTAIRE ritual. We use exclusively spring water with an exceptionally low content of dissolved minerals and ideal softness. This absence of hard mineral elements is technologically crucial – it does not burden the extraction and gives the delicate teas absolute freedom to release their finest aromatic nuances and pure, vertical structure into the base.

The production process begins with a precise, multi-infusion extraction of organic teas of the highest quality. These rare leaves come from exclusive spring harvests and unique private archives. Although the primary and technological basis of our production is held by the historical and legendary plantations of China and Taiwan, we are constantly open to discovering exceptional, hidden tea microterroirs around the world, which can bring unexpected depth and unknown character to our flavor architecture.

A precise line of light.

Sicilian gem

We supplement the tea infusion with freshly pressed juice from the rare Sicilian lemon cultivar Interdonato Messina Jonica PGI. This specific lemon brings a delicate, non-aggressive acidity and a noble citrus note without any traces of bitterness. The fruits ripen on steep terraces around historic Messina on the northeastern coast of Sicily, where they are hand-harvested exclusively during a strictly defined, short period from November to December, when the essential oils in their peel reach their absolute sensory peak.

Fermentation begins.

Pure fermentation energy

To enable the yeast to do their job, we add 100% natural crystalline grape sugar from European organic production to our pure tea essence. During the subsequent fermentation, this sugar is completely converted by the yeast into alcohol and microscopic, velvety perlage.

Traditional method

THE BOTTLE BECOMES A WORLD OF ITS OWN.

Once the tea wine is sealed inside the bottle, it follows the principles of the traditional method used in the production of the world’s finest sparkling wines. In darkness and silence, pressure, yeast and time begin their work. The bottle is no longer a container. It becomes the place where the final architecture of NOCTAIRE is created.

Natural effervescence.

BORN IN THE BOTTLE

Following primary fermentation and clarification, a second fermentation takes place directly inside the sealed bottle. Carbon dioxide is created naturally and remains within the liquid, forming a stable pressure of six atmospheres. This is the origin of NOCTAIRE’s fine, persistent and microscopic bubbles. Not carbonation added from outside, but energy born within.

The architecture of time.

AGING ON LEES

NOCTAIRE matures in complete darkness, resting in direct contact with its yeast lees. Through autolysis, the liquid gradually develops greater depth, integration and texture. Sharp edges soften. Aromatic layers connect. The effervescence becomes finer and more composed. Essential Cuvée rests on its lees for a minimum of twelve months. Rare and limited expressions are given twenty-four months or longer, allowing them to develop greater complexity, structure and aging potential. Nothing appears to move. Everything is changing.

The ritual of clarity.

REMUAGE AND DISGORGEMENT

Once maturation is complete, the bottles begin the gradual process of remuage. Through precise turning and inclination, the sediment slowly moves towards the neck of the bottle. It is then removed during disgorgement. A long period of stillness ends in one exact gesture. The liquid remains clear, focused and ready for its final rest.

NOTHING ADDED TO DISGUISE THE TRUTH.

After disgorgement, NOCTAIRE enters its final stage. The bottle is completed, sealed and returned to silence. Every decision is made with respect for the raw character of the liquid and the clarity of its final expression.

Without dosage & disguise.

BRUT NATURE

During disgorgement, a small amount of liquid is naturally lost and must be replaced. In conventional sparkling wines, this moment is often used to adjust sweetness and style through an expedition liqueur containing sugar. NOCTAIRE follows a different path. The bottle is replenished exclusively with the same pure sparkling wine from the identical batch. No additional sugar is introduced. No sweetness is used to soften, correct or conceal the final character. The result is a strict expression of Brut Nature. Dry. Precise. Unmasked.

Protected for time.

THE TECHNOLOGICAL SEAL

Every bottle is sealed with a premium DIAM Mytik closure, selected for its consistency and protection against cork taint. The closure allows the liquid to develop under controlled conditions while preserving its aromatic integrity over time. It is secured by a distinctive metal agrafe, transforming a functional detail into part of the NOCTAIRE ritual. Precision becomes ornament.

The last period of silence.

FINAL HARMONIZATION

After disgorgement, NOCTAIRE returns to rest for a minimum of six additional months. This final period allows the replenished liquid to integrate completely with the wine inside the bottle. The pressure settles, the effervescence regains its balance and the individual layers become one coherent expression. Only then is NOCTAIRE ready to leave the darkness of the cellar.
