From a legal perspective, NOCTAIRE is classified as a sparkling herbal wine. Since the basis for fermentation is not grape must, but a highly concentrated extract of specialty teas (which are botanically herbs) and fermentable sugars, the product falls into this category. However, the production method—including primary and secondary fermentation, aging on lees, and the resulting analytical values (12% alcohol, 6 bars of pressure) is identical to the production of sparkling wines made using the traditional method, such as in Champagne.
